The wine is produced from the soft pressing of the grapes with the must, separated from the skins. Secondary fermentation takes place in temperature controlled stainless steel. Sensory profile appearance: The wine has lovely pale yellow color with greenish tinges and a fine, fruity noise with hints of hawthorn flowers and a dry, well balanced, clean and quiet persistent palate; it also has a good flavors of green apples and white peach. This classic dessert wine is made from carefully selected fully ripened grapes that, immediately following harvest, are partially dried on traditional straw mats for up to 150 days to concentrate the sugars. The grapes are then pressed and the juice undergoes slow fermentation until 13% alcohol is reached. At this point fermentation is halted to preserve the desired level of natural grape sugar.
